  1. You need 3 of medium Yukon potatoes, peeled, cubed.
  2. You need 2 of large carrots, peeled, chunked.
  3. You need 1/4 head of cauliflower, roughly chopped.
  4. Prepare 1/4 of bulb of fennel, chopped.
  5. You need 1/2 of bulb celery root (celeriac), chopped.
  6. It’s 3/4 cup of celery, chopped.
  7. Prepare 1 of medium onion, chopped.
  8. It’s 2 of garlic cloves, minced.
  9. You need 2 tbsp of butter.
  10. It’s 1 tsp of fresh thyme.
  11. You need 2 tsp of fresh rosemary, chipped.

  1. Melt butter and Sauté onions in the bottom of a large stock pan until translucent, add garlic and stir frequently for 5 minutes.
  2. Add all the chopped vegetables, herbs, salt and pepper to the pot and roughly stir (leave bay leaf on top to easily remove after cooking).
  3. Add the broth to the pot, just covering the vegetables.
  4. Bring to a boil and simmer for 25-30 minutes (or until vegetables are fork soft).
  5. Remove the bay leaf, then use an immersion blender to blend all the vegetables together to a creamy, smooth consistency.
  6. Add cream (and more butter if desired) and blend.
