  1. Gently sweat leeks and onion in butter until soft (about 8 min). Do NOT let them brown..
  2. Add thinly sliced potatoes and stock..
  3. Salt & pepper to taste..
  4. Bring to boil then simmer gently 30 min..
  5. Puree until very smooth..
  6. Chill 24 – 72 hrs..
  7. Finely mince pistachios to powder..
  8. Finely chop prociutto and bacon..
  9. Fry ham & 1/3 bacon bits, when bacon is crisp add pistachio powder and cook, stirring constantly, 5 min..
  10. Add chilled veg stock, cream, 1c chicken broth and 2/3c potato..
  11. Simmer 40 min..
  12. Salt & pepper to taste..
  13. Add 1/4c fresh grated parmesan..
  14. Add 1c cubed potato and simmer until potatoes soften..
  15. Add 1c heavy cream and 1c mashed potatoes to thicken..
  16. Simmer 10 min..
  17. Salt & pepper to taste..
  18. Add 2 Tbsp increments of Paul Masson Rich Ruby Port to taste..
  19. Reduce to low heat and cook to desired thickness..
  20. Serve with swirl of cheddar port sauce, dab of sour cream, bacon bits and chives..
